The olive oil of Yesteryear was developed from over-ripe olives Picholines, stored in conditions of controlled temperature and time according to ancient techniques.
That olive oil is very round in the mouth and it will give you an impression of black tapenade, olive confit.
To preserve its full flavor, it is best used raw.
