The Nīmes PDO olive oil is obtained by the mix of Picholine and Negrette olives.
Thanks to the Picholine, she wakes up a slight bitterness and a fervence that gives her freshness and uncomparable aromatic intensity.
To get the PDO, the producer must respect exactly the specifications: density of the plantation, varietys, maintenance of the ground, pruning, treatment of the orchard, controle of the output, all of that up to the moment of the harvesting (calendar decided by the County).
The olives must then be brought to the mill 3 days maximum after their harvesting so that there will be no fermentation process.
The olive oil will then be send to a alb for tests then will be controled by a comitee to check its flavors and quality.
